No cooking necessary for these tasty bites, made with sunflower and pumpkin seed flours! These are easy to make and fun to get the kids involved in preparing.

Raw & Easy Falafel Bites

Makes 10 to 12 approx. 1-inch balls

  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup walnuts
  • ¼ cup chopped fresh parsley
  • 2 to 4 sun-dried tomato halves, soaked in warm water*
  • 1 to 2 garlic cloves
  • 2 tablespoons olive oil
  • small dry chili, crushed, or red pepper flakes
  • ½ lemon, juiced
  • dry oregano
  • herbes de Provence
  • salt and pepper

Assembly
Grind the seeds into fine flour using a coffee grinder or a food processor. (If you have a “bullet” style personal blender with a flat-blade attachment, that works, too!) Finely chop walnuts and tomatoes. Mince garlic, or press through a garlic press.

Combine all ingredients with the seed flour and mix well with your hands.

Take a small amount of the mixture, about 1½ to 2 tablespoons, and roll into balls. You should get 10 to 12 falafel bites. Serve immediately, or refrigerate for later.

*If you use dry tomatoes, soak in warm water for 15 to 20 minutes, until soft and plump. Squeeze excess water out before chopping. You can also use bottled-in-oil tomatoes; drain well before using.
